Dr. Tanya Ruetzler is a hospitality and tourism educator with extensive industry and academic experience. She  holds a doctorate specializing in Nutrition and Foodservice Systems, a master’s degree in Hotel Administration, and a bachelor’s degree in hospitality management.

Her professional background is characterized by over three decades of   teaching in US universities and experience in restaurant management within casual theme, independent food and beverage operations, complemented by experience in hotel catering, and events planning and management.

Dr Ruetzler teaches a range of hospitality and tourism courses within the Faculty of Business and Entrepreneurship, including Food and Beverage Operations, Food Safety, Hospitality Human Resource Management, Convention and Destination Management, and Tourism. 

Her research builds on her interdisciplinary background in nutrition and hospitality management and focuses on cross-cultural perceptions of foodservice operations, hospitality human resources—particularly workforce competencies—and wine and beer marketing and purchasing behavior. 

Dr Ruetzler has published scholarly research and academic support materials, including a book chapter in food and beverage operations. Her current research interests include tourism development and its impacts on host countries and local communities.
